What does it mean to observe?

What does it mean to observe something? What exactly is an observation? What exactly do we mean when we say that we see, touch, taste, smell, and think? What exactly is going on with the organs of perception? Did we evolve to be able to understand everything in the world? Did we evolve to have the ability to understand ultimate reality? Why would we? We see a rock! We eat a twig! We run from a snake 🐍? Why would any of that require our understanding of much of the world beyond our own noses? What then does it mean to observe something? Who kbows!
